Phytonutrient-Rich Tuna Salad Variations

Tuna Salad with Thyme and Grapes
Omit lemon juice, pickles, garlic, and parsley. Add 2 teaspoons minced fresh thyme, a cup of halved seedless red grapes, 1/4 cup slivered almonds, 2 tablespoons balsamic vinegar, and 6 ounces halved red seedless grapes (about 1 cup).

My Mom’s Tuna Curry with Apples and Currants
Omit lemon juice, pickles, garlic, and parsley. Blend 1-2 teaspoons curry powder into mayonnaise, then add 1 diced apple, 1/4 cup currants, and 2 tablespoons of diced fresh basil.

Mexican Tuna Salad
Omit lemon juice, pickles, garlic, and parsley. Add 1 finely chopped jalapeƱo pepper, 2 chopped scallions or green onions, 2 tablespoons chopped fresh cilantro leaves, and (optional) adding 4 ounces fresh or pickled cauliflower florets.
